You heard me right. BLT...salmon...tacos. My son is absolutely SPOILING ME!! He has a bit of obsession with salmon and I wanted to see how he could bring his flair to that yumminess and boy did he (see above photo of his display of 'flairness' :P)!
Here's the recipe:
8 4-inch tortillas
4 3-4 ounce salmon fillets
4 slices bacon, fried and crumbled
2 tomatoes, chopped
2 avocados, chopped
shredded lettuce for garnish
salt and pepper
So little big man put the salmon fillets on some foil (that he sprayed with cooking spray) and seasoned it with salt and pepper, then put it in the preheated oven and broiled it for about 4-5 minutes on each side.
When it was done, little big man flaked the salmon with a fork, then put each individual item in bowls for an awesome SALMON TACO BAR!! This was so much yums and I can't wait to see what little big man makes tomorrow!!
The meal was 455 calories/serving with the meal making four servings, and it was only $3.18/serving! Yeah buddy!
