Slow Cooker Beef Roast with Onions and Potatoes

Oh boy, everyone, I'm back again!  Had a rough time with my eyes and kept away from the blogging, but I made sure to take some photos so I could do them all when I'm ready!
This meal I made last week and it was really delicious.
First thing I did was chop 1 sweet onion into half moons, place it into my slow cooker, and add a 3 pound beef round roast on top.  Then I cut 3 Yukon gold potatoes into 2 inch cubes and added that to the slow cooker, as well as added 2 cloves of garlic that were finely chopped.
Then I mixed 1 can of beef broth (minus 1/2 cup) with 1 package of onion soup mix and poured it over the beef and vegetables.
I set the slow cooker on low, went to work and let it cook for 10 hours.  When I got home I removed the beef and vegetables to a platter and covered it to keep it warm.  I also coarsely sliced the beef for smaller sizes.  Then I added the remaining broth and 1/4 cup of flour in a bowl and added it to the juices.  I increased the heat to high and cooked it for about 15 minutes to let it thicken.
Then I served the meat and potatoes with the sauce over it.  Yums!  

This meal was only 350 calories and only $2.75/serving!  Not to mention there were TONS of leftovers!
Here's the recipe!

1 large sweet onion, cut into half moons
1 3 pound boneless beef round roast
3 Yukon gold potatoes, cut into 2 inch cubes
2 cloves garlic, finely chopped
1 can (14 ounce) beef broth
1 package (1 ounce) onion soup mix
1/4 cup all-purpose flour
